Berry Muffins
2 cup plain flour
1 & 1/4 cups sugar
2 teaspoons baking powder
Dash salt
2 eggs beaten
1/2 cup butter, melted
1/2 cup buttermilk
1/2 teaspoon vanilla extract
2 cups berries (blueberries, raspberries, cranberries, triple berries) can be frozen and chopped in food processor - 1 cup nuts can be substituted for the second cup of berries)
Combine flour, sugar, baking powder and salt in a bowl. Combine eggs, butter, buttermilk and vanilla. Stir into dry ingredients until moistened. Gently fold in berries and nuts, if used. Fill greased muffin tins about 2/3 full. Bake at 375 degrees for 20-25 minutes. Cool 10 minutes in pan before removing to cooking rack.
Yield: about 1 dozen
