Nutty Pumpkin
Muffins
2 eggs, beaten
1 1/2 cups sugar
1 cup canned pumpkin
1/2 cuup vegetable oil
1/3 cup water
1 2/3 cups flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts or pecans
Mix eggs, sugar, pumpkin, oil, and water in large bowl.
Combine flour, cinnamon, baking soda, baking powder,
and salt. Stir into pumpkin mixture and mix well. Fold
in nuts.
Fill greased muffin pan 3/4 full. Bake at 350 degrees
for 20 - 25 minutes or until muffins are done. Do not
overbake.
Cool on wire rack.
Makes about one dozen muffins.
